11. CREAMY SWEET POTATO & ROSEMARY PENNE

  • COOK TIME: 20 minutes
  • TOTAL TIME: 30 minutes
  • YIELD: 4

INGREDIENTS

  • 1 16-ounce package penne pasta
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 1/2 cups pureed or mashed sweet potatoes
  • 1/2 cup reduced-sodium vegetable broth
  • 1 – 2 tablespoons chopped fresh rosemary leaves
  • 1/2 teaspoon salt
  • 1/4 cup pine nuts, toasted

INSTRUCTIONS

  1. In a large stockpot, cook the pasta in salted water according to package directions for al dente.
  2. In a large saucepan *affiliate link, heat olive oil to medium. Add garlic and sauté until fragrant – about 1 minute.
  3. Whisk in sweet potato, vegetable broth, rosemary leaves, and salt until combined. Reduce heat to low and keep warm until pasta is ready.
  4. Strain pasta, reserving 1 cup of pasta water.
  5. Toss pasta with the sauce and 1/2 of the pasta water. If needed, add the remaining pasta water to loosen the sauce before serving.
