17. SPINACH AND WHITE BEANS WITH DITALINI

 

  • PREP TIME: 5 minutes
  • COOK TIME: 25 minutes
  • TOTAL TIME: 30 minutes
  • YIELD: 4

INGREDIENTS

  • 1 cup uncooked ditalini pasta
  • 1 tablespoon olive oil
  • 1 small yellow or sweet onion, diced
  • 1 cup water
  • 1 tub reduced sodium chicken Knorr Homestyle Stock
  • 1/4 teaspoon crushed red pepper flakes
  • 1 6-ounce bag fresh spinach leaves
  • 1 15-ounce can white kidney beans, drained and rinsed
  • 1/4 cup pecorino romano or parmesan cheese

INSTRUCTIONS

  1. In a large saucepan *affiliate link, cook ditalini according to package directions.
  2. While pasta is cooking, heat olive oil in a large skillet *affiliate link to medium heat.
  3. Saute onion until translucent – about 5 minutes.
  4. Add water, stock tub, pepper flakes and spinach leaves.
  5. Cover skillet and wilt spinach.
  6. Add strained pasta, beans and cheese, stirring to combine.
