7. BAKED MACARONI AND CHEESE

 

  • PREP TIME: 5 minutes
  • COOK TIME: 55 minutes
  • TOTAL TIME: 60 minutes
  • YIELD: 8

INGREDIENTS

  • 1 16-ounce box elbow macaroni
  • 1/2 cup butter (1 stick)
  • 1/2 cup all-purpose flour
  • 3 1/2 cups non-fat milk (warm in microwave for 1 minute)
  • 4 cups extra sharp or sharp shredded cheddar cheese
  • 1/2 cup Italian-seasoned breadcrumbs

INSTRUCTIONS

  1. Preheat oven to 375 F.
  2. Cook macaroni according to package directions in salted water.
  3. Meanwhile, melt butter in a large saucepan *affiliate link over medium heat.
  4. Add flour and whisk to make a roux – cook for 1 minute.
  5. Slowly add warmed milk, continuously whisking until it boils.
  6. Once boil, cook and stir for 1 more minute.
  7. Stir in shredded cheese until melted and sauce is smooth.
  8. When macaroni is cooked, strain and place into the baking dish.
  9. Pour in the cheese sauce, stirring to evenly coat the macaroni.
  10. Sprinkle a layer of breadcrumbs on top.
  11. Bake for 30 minutes or until sides are browned and bubbly.
